A thicker base and longer bake time give heavier, wetter ingredients enough time and structural support to cook through without collapsing or oversoaking the crust.

Pan and tray styles were largely developed within, or adapt comfortably to, the lower temperature ranges domestic ovens can reach, unlike styles built specifically around wood-fired or professional deck-oven heat.

The lacy, crisp texture at a Detroit-style pizza's edge is a frying effect, not just a baking one — cheese placed at the edge of an under-oiled pan will still melt and brown somewhat, but won't develop the same crisp, fried texture.

    Deep-dish is far deeper, with a pastry-like crust, a thick sauce layer and a genuinely filled interior. Detroit is a thick focaccia-like base with topping on it, not a filled pie, and its signature is the edge rather than the depth.

How hard the cheese edge is taken varies between makers, and brick cheese is often substituted outside Michigan, which changes both the melt and the salt level noticeably.
