Included here because a failed launch ruins a pizza that everything else got right, and because wood and metal peels solve genuinely different halves of the problem.

A peel carries the pizza; it contributes no heat.
Not a thermal item, but it interacts with heat in one way that matters: a metal peel left in a hot oven becomes a heat source of its own, and a wooden peel scorches.
Excess flour or semolina carried from the peel onto a hot surface scorches and can taste acrid — one of the few ways a peel affects flavour.

None — but a hesitant launch that leaves the pizza sitting on the peel for a few extra seconds is one of the commonest reasons a base sticks and tears.

Setting it up
- Build the pizza on a lightly and evenly floured or semolina-dusted peel, not a heavily coated one.
- Shake the peel gently before topping and again before launching — if the dough does not move freely, it will not launch.
- Top quickly. Every additional 30 seconds on the peel increases the chance of sticking substantially.
- Launch with the peel tilted low and close to the surface, moving forwards then pulling back sharply in one motion.
- Retrieve with a metal peel or turning peel rather than the wooden one used to launch.
Technique adjustments
- Wooden peels release dough better because the surface is less smooth and less cold — they are the better launching tool.
- Metal peels slide under a baked pizza far better than wood — they are the better retrieval and turning tool.
- If sticking is persistent, use semolina rather than flour: coarser grains act more like ball bearings and burn less readily.
- A perforated metal peel sheds excess flour as you launch, reducing scorching on the surface.
Strengths
- A wooden peel is the single most effective fix for a dough that sticks during launch
- A turning peel makes wood- and gas-fired ovens genuinely manageable
- Inexpensive relative to how many otherwise-good pizzas a failed launch destroys
Limitations
- Wooden peels scorch and cannot be left in a hot oven or washed heavily
- Metal peels are poor at launching — dough sticks to smooth, cool metal readily
- A peel wider than your oven mouth is unusable, which is easy to buy by mistake
Common failure modes
- The pizza sticking and folding on itself mid-launch, from too little dusting or too long on the peel
- Torn dough from a hesitant, stop-start launch motion
- Scorched flour on the baking surface from over-dusting the peel
- A wooden peel warping or splitting after being washed and left wet
Adapting it at home
Universally relevant if you launch onto a surface at all. An inverted baking tray works as an improvised peel; a sheet of parchment under the pizza works too, though it should not be used under a grill or above about 220 °C.
Which styles suit it
No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

Flavour and texture
Neutral when used well. Its only real flavour contribution is negative — scorched dusting flour on the base, which reads as bitter.
Chiefly indirect: a clean launch preserves the shaped rim and even thickness that everything else about the bake depends on. Semolina leaves a slight grit on the underside that is characteristic of some traditions.

Safety
- Never leave a wooden peel resting in a hot oven or pizza-oven mouth.
- Use a long-handled peel for any live-fire oven; reaching in with a short one causes burns.
Care and maintenance
- Scrape a wooden peel clean and wipe rather than washing; dry flat to prevent warping.
- Oil a wooden peel very occasionally with a food-safe oil to stop it drying out and splitting.
