Pizza in a wood-fired oven

The environment Neapolitan pizza was designed around: a 60–90 second bake under a radiating dome. It does one thing better than anything else and is genuinely bad at most others.

Hardwood burning inside the cooking chamber itself, so the pizza cooks alongside a live flame rather than in a separate heated space.

Radiant and directional. The dome, floor, and flame all contribute differently, and none of them evenly — the side facing the fire cooks several times faster than the side away from it, which is why turning is a skill rather than a nicety.

Consistently overstated. A properly-run wood oven burns cleanly with the fire well established, and a 90-second bake gives very little time for smoke uptake. What people identify as smokiness is usually char.

Bottom and top heat

Bottom heat

Very strong from the stored heat in the floor, and managed separately from the flame. A floor that is too hot burns bases in under a minute regardless of how well the dome is running.

Top heat

Extremely strong — the combination of a radiating dome and rolling flame is what inflates and spots a Neapolitan rim, and no other equipment here reproduces it.

Setting it up

  1. Light and run the fire for 1–2 hours to bring the dome and floor to working temperature. There is no shortcut.
  2. Push the established fire to one side and maintain a small, actively flaming fire rather than a large one.
  3. Check the floor temperature separately from the dome — the two are managed independently and a hot dome with an overheated floor burns every base.
  4. If the floor is too hot, mop it or leave it to rest; if too cool, move embers across it briefly.
  5. Launch near the fire side, then turn every 15–20 seconds throughout the bake.

Technique adjustments

  • Use a high-strength flour and a well-developed dough. A 90-second bake at 450 °C destroys a weak dough.
  • Top very sparingly — there is no time for wet toppings to release and evaporate.
  • Fresh basil goes on after the bake, not before; it blackens almost instantly at these temperatures.
  • Work in a continuous rhythm. A pizza left unturned for five seconds too long is burnt on one side.

Strengths

  • The only environment that produces a genuine Neapolitan bake and its characteristic leopard-spotted, inflated rim
  • Enormous thermal mass means near-instant recovery — pizza after pizza with no drop-off
  • Top and bottom heat both strong simultaneously, which almost nothing else here manages
  • Genuine live-fire cooking character

Limitations

  • The steepest learning curve of anything in this catalogue — fire management, floor management, and turning are three separate skills
  • 1–2 hour preheat makes a spontaneous single pizza impractical
  • Very uneven heat requires constant turning; an unattended pizza is a burnt pizza in seconds
  • Actively bad at every style that needs a long, gentle, even bake
  • Outdoor only, weather-dependent, and needs fuel storage

Common failure modes

  • A burnt base with a raw top, from an overheated floor
  • One side black and the other pale, from insufficient turning
  • A pale, doughy pizza from launching before the oven had genuinely saturated with heat
  • Blackened basil and scorched delicate toppings added before the bake
  • Undercooked centres on over-topped pizzas that the short bake cannot penetrate

Adapting it at home

Low as a general-purpose tool and unmatched for its one purpose. Domestic outdoor pizza ovens have made this far more accessible, but the skills — floor management and constant turning — are unchanged.

Which styles suit it

No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

  • Neapolitan pizzaStrongly suited

    This is the oven the style is defined by; the AVPN standard specifies a wood-fired bake at these temperatures.

  • Pizza canottoStrongly suited

    The extremely inflated rim depends on high heat shocking a high-hydration dough before the crust can set.

  • Pizza MarinaraStrongly suited

    No cheese and a minimal topping load make this the most forgiving thing to bake in a very hot oven.

  • A high-hydration, high-heat style squarely within this oven's range.

  • New York-style pizzaWorkable with adaptation

    New York style wants a longer bake at a lower temperature than a wood oven naturally runs.

    Adaptation: Let the oven cool towards 320–350 °C and bake for several minutes rather than seconds — most wood ovens pass through this window as they cool after a Neapolitan session.

  • Detroit-style pizzaPossible, but compromised

    A pan bake makes no use of the oven's radiant advantage.

    Compromise: Workable on a cooled oven, but the strong, uneven floor heat makes scorching the pan base likely, and nothing is gained over an indoor bake.

  • Chicago deep-dish pizzaGenerally unsuitable

    A 30–45 minute bake at 220 °C is the opposite of what this equipment does.

    Compromise: You would be waiting for the oven to cool most of the way down, at which point a kitchen oven does the job better and more evenly.

Flavour and texture

The dominant contribution is high-heat char and rapid Maillard browning, not smoke. A well-made wood-fired pizza usually tastes of intensely browned dough with faintly bitter charred spots — a flavour a domestic oven genuinely cannot reproduce, for reasons of temperature rather than fuel.

Usually gives a soft, moist, foldable base with a dramatically inflated, blistered rim, and a centre that stays wetter than any longer bake — a texture profile that is essentially unique to this environment.

    Extremely rapid surface heating produces the localised blistering and dark leopard spots that define the style, rather than the even browning slower bakes give.

    Combustion products are present in the chamber and some deposit on the pizza.

    Exception: In a well-run oven with a clean, established fire and a 90-second bake, the smoke contribution is small — much smaller than the phrase 'wood-fired flavour' implies.

Texture and mouthfeel

  • The same very fast bake usually increase perceived moisture

    There is not enough time to dry the dough out, so the crumb stays soft and moist and the centre stays notably wetter than any long-baked pizza's.

What goes wrong on this equipment

  • The pizza is too heavily topped for the bake length. At 450 °C the rim is finished in under 90 seconds, and there is simply no time for heat to penetrate a deep, wet topping load in the centre.

    Change next time: Top far more sparingly, and pre-cook anything wet. A very hot oven demands restraint that a domestic oven forgives.

Safety

  • Outdoor use only, always, with proper clearance from structures and overhead vegetation.
  • Keep flour and flour dust away from open flame.
  • The dome and flue stay dangerously hot for many hours after the fire dies.
  • Use a long-handled peel and turning peel; reaching into a 450 °C chamber with short tools causes burns.

Care and maintenance

  • Sweep ash from the floor between sessions; ash under a pizza scorches and tastes acrid.
  • Check for flue blockage and floor cracking periodically.

Strongly supported

How much of 'wood-fired flavour' is actually smoke is genuinely contested. Marketing and much popular writing attribute it to the wood; the very short bake time and clean-burning fire make large smoke uptake implausible, and char from high-temperature surface browning is the better-supported explanation. PizzaHQ states both.
