The most controllable heat profile in this catalogue. Where every other environment forces you to work around a fixed top-to-bottom relationship, here it is a setting — which makes it uniquely good for styles whose usual problem is heat imbalance.

Bottom and top heat

Bottom heat

Directly settable, which is unique here. If the base is browning too fast, you turn the bottom element down rather than moving a shelf or resting a floor.

Top heat

Also directly settable, and strong enough on most models to produce genuine rim spotting.

Setting it up

  1. Preheat 15–30 minutes at the target temperature — much faster than a wood oven, comparable to gas.
  2. Set top and bottom independently. A useful starting point is equal settings, adjusting after the first pizza.
  3. Launch and turn once or twice; heat is far more even than a flame-fired oven but not perfectly so.
  4. Adjust the balance rather than the total between pizzas: pale toppings means more top, dark base means less bottom.

Technique adjustments

  • Thermal recovery is weaker than gas or wood, so allow a pause between pizzas in a long session.
  • Because the balance is settable, this is the one high-heat environment where a heavier topping load is manageable — turn the top up and extend the bake slightly.

  • Works indoors, all year, with no fuel, flame, or ventilation requirement
  • Independent top and bottom control, which no other environment here offers
  • Reaches genuine high-heat pizza temperatures on the better models

  • The gap between models is large, and a lower-powered unit may not reach its stated maximum in practice

Common failure modes

  • Progressively slower bakes across a session, from insufficient recovery time
  • A pale base from launching before the deck has fully charged, which is easy to miss when the air is up to temperature quickly
  • Attempting a pizza larger than the chamber comfortably takes, so the edges sit outside the heated zone

Adapting it at home

The most practical high-heat option for anyone without outdoor space. Its controllability makes it genuinely easier to learn on than gas or wood, at the cost of recovery speed and pizza size.

No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

    Compromise: Where a small pan fits, the result is fine, but the oven's advantages are irrelevant to a pan style and the kitchen oven is simpler.

Flavour and texture

Usually gives high-heat char character with no smoke or fire note whatsoever. The result reads as a very good, very hot oven pizza rather than a live-fire one.

Tends to produce the inflated rim and soft base of high-heat pizza, with the ability to tune how crisp the base is via the bottom element — a control no other environment here provides.
