Pizza in a kamado
A thick-walled ceramic cooker that holds heat like a masonry oven and, with a heat deflector fitted, is the closest a BBQ gets to a genuine pizza oven — and the fastest to incinerate a base without one.

The ceramic mass is the whole story. It absorbs enormous amounts of heat and radiates it back off the dome, so a kamado behaves far more like a masonry pizza oven than like a metal BBQ — very stable once settled, and very slow to change.
Less than an open charcoal kettle, because the fire is well-established and the airflow is controlled. The dominant flavour contribution is radiant char, not smoke.
Bottom and top heat
Bottom heat
Ferocious and directly above the fire without a deflector — the single most destructive bottom heat in this catalogue. With a deflector fitted it becomes controlled and even.
Top heat
Excellent, and the kamado's real advantage: the hot ceramic dome radiates down onto the toppings in a way no metal BBQ and no domestic oven can.
Setting it up
- Fit the heat deflector before anything else. Pizza in a kamado without a deflector is charcoal, not pizza.
- Place the deflector above the firebox or fire ring, then the cooking grid above it, then the stone on top of the grid.
- Raise the stone as high in the dome as the setup allows — firebricks or an extender rack under it help — so radiated dome heat reaches the toppings.
- Light, fit everything, and bring the kamado up slowly with the vents. Rushing a ceramic cooker to temperature risks cracking the ceramic.
- Allow at least 45 minutes at temperature so the stone charges properly; a dome reading is not a stone reading.
- Launch, close the dome, and check after 3 minutes. Rotate once.
Technique adjustments
- Choose your target: roughly 260–290 °C dome with a ~245 °C stone for a standard pizza, or a much hotter setup with a 340–370 °C stone for a genuinely crisp, fast base.
- Bring the temperature down slowly if you overshoot — a kamado's mass means it does not respond quickly, and closing the vents hard can starve the fire completely.
- Never open a hot kamado quickly; open the lid a crack first to avoid a backdraught flare.
Strengths
- Outstanding heat retention and stability once settled — the most oven-like BBQ by a distance
- Genuine top heat radiating off the hot dome, which is what most BBQ pizza lacks
- Reaches temperatures well above a domestic oven, and holds them
- Very efficient with fuel, so a long session is practical
Limitations
- Completely dependent on a heat deflector; without one it is a base incinerator
- Very slow to change temperature in either direction — overshooting costs you real time
- Heavy, expensive, and the ceramic itself can crack from thermal shock or rough handling
- The learning curve for vent control is real, and pizza is not the forgiving thing to learn it on

Adapting it at home
Very capable but not a casual choice — this is dedicated equipment. If you own one, it is a better pizza oven than your kitchen oven; if you do not, a gas BBQ with a stone reaches useful results with far less setup.

Flavour and texture
Usually reads as closer to a wood-fired oven than to a BBQ — dominated by char and high-heat browning rather than smoke. It is the only BBQ here where top-surface browning contributes as much flavour as the base does.
Tends to give a genuinely fast-set, blistered base with an evenly browned top, which is the combination most other domestic equipment cannot manage simultaneously.

No air gap between the deflector and the stone. With the two in contact, heat conducts straight into the stone's underside while its top face stays cooler, which is a direct route to thermal stress.

Safety
- Open the dome slowly and in stages. A rapid opening on a hot kamado can produce a sudden flare-up.
- Never use charcoal in an enclosed space.
- The ceramic exterior gets hot enough to burn on contact, unlike most metal BBQs' insulated shells.
- Bring the cooker up to temperature gradually; heating ceramic too fast risks cracking it.
Care and maintenance
- Keep the deflector and stone dry between uses — absorbed moisture is the main cause of both cracking.
- Clear ash from beneath the firebox regularly or airflow control degrades.
