Pizza in a gas pizza oven
Most of a wood-fired oven's temperature with far less of its skill requirement. It gets to Neapolitan heat in 20 minutes rather than two hours, and burns bases just as readily if you ignore the floor.

A propane or natural-gas burner, usually at the rear of the chamber, often with a separately adjustable flame.
Directional like a wood oven but far more controllable. The flame is at one end, so the heat is still strongly uneven and turning is still essential — but the flame level responds instantly to a dial.
Effectively none. Anyone expecting wood-fired character from a gas oven will find the char but not the smoke — which, given how little smoke a wood oven actually contributes, is a smaller difference than it sounds.
Bottom and top heat
Bottom heat
Strong stored heat in the stone floor, and the most common failure point — the floor keeps absorbing heat after the air is up to temperature, so a floor that was fine for the first pizza is often too hot by the third.
Top heat
Strong from the rolling flame across the chamber roof, giving genuine rim inflation and spotting.
Setting it up
- Preheat for 20–30 minutes at full flame — much faster than a wood oven, but not instant.
- Measure the stone floor temperature with an infrared thermometer if you can. Roughly 400–450 °C suits Neapolitan; above that, bases burn.
- Turn the flame down before launching, not after. Full flame with a launched pizza scorches the rim on the flame side.
- Launch, then turn every 20–30 seconds throughout.
- Between pizzas, let the floor rest or turn the flame down — floor temperature climbs through a session and is the usual cause of a batch getting progressively worse.
Technique adjustments
- Keep toppings minimal, exactly as for a wood oven — a two-minute bake cannot cook a heavily-loaded pizza through.
- If the rim scorches before the base is set, the flame is too high relative to the floor; if the base scorches first, the floor is too hot and needs resting.
- Turn more often than feels necessary. The flame side is dramatically hotter.
Strengths

Common failure modes
- A burnt base by the third or fourth pizza, from an unmanaged floor that keeps climbing
- A scorched rim on the flame side, from launching at full flame
- One side black and one pale, from turning too slowly
- An undercooked centre on an over-topped pizza
Adapting it at home
High. Portable gas pizza ovens are the most practical route to genuine high-heat pizza at home, and they collapse the wood oven's biggest barrier — the two-hour fire — without changing the underlying skill of turning.

Most portable gas pizza ovens have a chamber too small and too hot for a pan bake.
Compromise: Even where a pan fits, the strong floor heat scorches the pan base long before the interior is done. The kitchen oven is the right tool.
Flavour and texture
Usually indistinguishable from a wood oven in char character and clearly different in the absence of smoke. Since char rather than smoke does most of the flavour work in high-heat pizza, the gap is smaller than the fuel difference suggests.
Tends to give the inflated, blistered rim and soft, moist base of high-heat pizza — the full high-heat texture profile without the fire-management skill.

The pizza was launched at full flame and turned too slowly. The flame side of a gas pizza oven is dramatically hotter than the far side, so a stationary pizza chars on one arc while the rest barely cooks.
Change next time: Turn the flame down before launching rather than after, and turn the pizza every 20–30 seconds throughout the bake.
Safety
- Outdoor use only, with proper clearance.
- Check gas connections before each session and shut off at the bottle afterwards.
- The chamber mouth radiates intensely; keep hands and face clear when turning.
- Portable ovens are light and can be knocked over while hot — site them on a stable, level surface.
Care and maintenance
- Brush the stone floor between sessions; burnt flour and semolina accumulate quickly at these temperatures.
- Flip the stone floor periodically if the model allows, so both faces wear evenly.
