How to get closer to pizzeria pizza in a home oven
Most of the gap is closable and one part is not. Fermentation, surface, preheat and topping restraint get you most of the way; the last 200 °C of oven temperature does not exist in your kitchen.
What you are aiming for
Pizza at home that is recognisably as good as a decent pizzeria's, rather than obviously homemade.
Why it happens
A pizzeria differs from a home kitchen in four ways that matter: it ferments dough for days, it bakes at temperatures a domestic oven cannot reach, it bakes on a permanently-hot deck with enormous thermal mass, and it tops pizzas far more sparingly than home cooks do. Three of those four are free to copy. Only the temperature is a genuine equipment limit — and the honest consequence is not that home pizza is worse, but that it should be a different style.

Fix it on this pizza
Halve the toppings and use less sauce.
Immediately improves the bake, the base, and the balance without changing anything else.
Give the oven and its surface a full hour at maximum before the first pizza.
Fixes the pale, soft base that makes home pizza most obviously homemade.
Change it for good
Adopt a 48-hour cold-fermented dough as your standard.
Closes the flavour gap, which is the part people notice most and blame the oven for.
Fit a steel high in the oven and finish every pizza under the grill.
Closes the base and browning gap as far as a domestic oven allows.
Pick one style and make it repeatedly rather than a different one each time.
Almost all remaining improvement is repetition — pizzaioli make the same pizza hundreds of times, and that is a large part of why theirs is better.
What it costs you
Getting closer to a pizzeria mostly means doing less, not more: fewer toppings, less sauce, simpler cheese. That is a genuine loss if what you enjoy about home pizza is loading it up. Long fermentation also removes spontaneity — pizza becomes something planned two days ahead.
How far you can realistically get
You cannot make Neapolitan pizza in a domestic oven. The bake is 60–90 seconds at 430–485 °C, and a home oven is roughly 200 °C short with no way to close the gap. Everything else — flavour, base, browning, balance — is genuinely achievable. Being clear about which is which is more useful than pretending the whole gap can be closed.
