Pizza in a cast-iron pan

A cast-iron skillet is a small, very heavy baking surface with walls. Preheated and oiled, it fries the base as it bakes, which is the most reliable route to a genuinely crisp bottom without buying a steel.

No heat of its own, but far more thermal mass than a tray — closer in behaviour to a small, thick stone with sides.

High mass in a small area. It charges slowly, holds heat hard, and delivers it into whatever touches it, which is why a preheated skillet crisps a base so effectively and why an under-preheated one is barely better than a tray.

Oil in a very hot cast-iron pan can reach its smoke point. Use an oil with a high smoke point rather than an unrefined finishing oil.

Bottom and top heat

Strong and, uniquely here, combined with oil — the base is conducted into and shallow-fried at once, which is a different mechanism from dry-baking on a stone.

Top heat

The pan's walls shield the pizza's edges from some top heat, so the rim can lag behind the centre.

Setting it up

  1. Preheat the empty skillet in the oven for 20–25 minutes at 250 °C or above, or preheat it on the hob until it is genuinely hot.
  2. Add a generous film of high-smoke-point oil to the hot pan — this is what does the crisping, and it is not optional.
  3. Press the dough into the hot, oiled pan carefully, working quickly and pushing it up the sides slightly.
  4. Top sparingly, remembering the sides shield the edges from top heat.
  5. Bake on a low shelf for roughly 12–14 minutes, finishing under the grill if the top is behind.

Technique adjustments

  • Some methods start the loaded pan on the hob for 2–3 minutes to set and colour the base, then transfer it to the oven — an effective option when the oven alone is weak.
  • Use a smaller dough ball than you would for a round of the same nominal diameter; a skillet pizza is thicker by nature.
  • Release the pizza from the pan within a minute or two of coming out, or the trapped steam softens the base you just worked to crisp.

Strengths

  • Very reliable crisp base without a stone or steel, because oil plus mass beats mass alone
  • Walls make it forgiving of a wet dough and generous toppings that would flood a flat base
  • Doubles as a hob-to-oven surface, which no other option here does
  • Effectively indestructible and improves with use

Limitations

  • Small — a typical skillet makes one modest pizza, not a family round
  • The pan's sides shield the rim from top heat, so edges brown less than the centre
  • Heavy and awkward to handle hot, with a handle that is as hot as the pan
  • The oil that crisps the base also makes the result noticeably richer than a dry-baked pizza

Common failure modes

  • A soft base, almost always because the pan was loaded before it was properly preheated
  • Sticking, from too little oil or a poorly seasoned pan
  • Pale, underdone rim while the centre is done, from the pan's shielding walls
  • Smoking oil, from using an unrefined oil at 260 °C
  • The base going soft after baking, from leaving the pizza sitting in the pan

Adapting it at home

Excellent, and the best answer for anyone who owns a skillet but no stone or steel. It is also the most transferable technique here — the same preheat-and-oil principle applies to any heavy pan.

Which styles suit it

No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

  • Pizza al padellinoStrongly suited

    A pan-baked round by definition; a cast-iron skillet is essentially the right vessel for it.

  • Detroit-style pizzaWorkable with adaptation

    Detroit's identity depends on a caramelised cheese edge against tall, straight pan walls.

    Adaptation: A straight-sided cast-iron pan can carry a cheese edge; a sloped skillet cannot, and gives a very good pan pizza that is not Detroit.

  • Chicago deep-dish pizzaWorkable with adaptation

    Deep-dish needs a deep, straight-sided vessel and a long, moderate bake.

    Adaptation: A deep cast-iron pan works well, but drop the temperature to around 220 °C and extend the bake — a skillet preheated for crisping will scorch a 40-minute bake.

  • New York-style pizzaPossible, but compromised

    A skillet is far smaller than a New York round and has walls.

    Compromise: You get a thick, rich, pan-style pizza rather than a thin foldable slice. It is a good pizza; it is not this style.

  • Neapolitan pizzaGenerally unsuitable

    Neither the temperature, the bake time, nor the oil-fried base has anything to do with a Neapolitan bake.

    Compromise: The result shares nothing meaningful with the style beyond its ingredients — choose a pan style deliberately instead.

Flavour and texture

Tends towards a rich, fried, faintly nutty base flavour rather than the dry toast of a stone bake. This is a genuine style characteristic of pan pizza, not a defect of the method.

Usually gives a crisp, almost fried underside over a soft, bready crumb — the biggest single crispness gain available without buying a dedicated baking surface.

  • Oil-fried base tends to increase dairy richness

    The fried base reads as richer overall, which amplifies the perceived richness of the cheese sitting on it.

    Exception: Using a small amount of a neutral oil rather than a generous amount of butter or olive oil keeps this modest.

  • A preheated, oiled cast-iron surface usually increase crispness

    Conduction from a high-mass surface combined with hot oil in direct contact effectively fries the base rather than only baking it.

    A well-fried centre-base against a softer, less-browned rim gives more textural variation across the slice than a flat bake does.

What goes wrong on this equipment

  • A pan preheated for crisping is being used for a bake that is far too long for it. Cast iron holds heat hard, and a 30–45 minute bake in an aggressively preheated pan cooks the base for the entire duration.

    Change next time: For long pan bakes, start from a cool or lightly warmed pan and drop the oven to around 220 °C. Save the hot-preheat-and-oil method for short bakes where crisping is the goal.

  • Pan crust lacks crispnessStrongly supported

    The pan was not preheated. Cast iron's advantage is entirely in the heat it has stored before the dough arrives; loaded cold it behaves much like a thick tray.

    Change next time: Preheat the empty pan for 20–25 minutes at 250 °C or above, add a generous film of high-smoke-point oil, then press the dough in. Release the finished pizza from the pan promptly — trapped steam softens the base you just crisped.

Safety

  • The handle reaches the same temperature as the pan. Assume it is lethal and keep a cloth on it.
  • Adding oil to a very hot pan can spit; add it away from yourself.
  • Do not carry a hot skillet containing loose oil.

Care and maintenance

  • Scrape and wipe rather than scouring; re-oil lightly after cleaning to preserve the seasoning.
  • Do not leave it wet — cast iron rusts quickly.
