Using the grill or broiler for pizza
The overhead element is the free fix for the one problem a pizza steel creates — a base that is done while the cheese is still pale.

A dedicated overhead radiant element, separate from the oven's main heating, on nearly every domestic oven.
Intense, purely radiant, and entirely top-down. It heats surfaces in its line of sight very fast and does almost nothing to the cavity as a whole, which is exactly the asymmetry a well-preheated baking surface needs correcting.
Bottom and top heat
Bottom heat
None of its own. The grill contributes nothing to the base, which is precisely why it pairs so well with a steel that contributes too much.
Top heat
Very strong and very fast — strong enough to blister cheese and blacken a rim in under a minute if unwatched.
Setting it up
- Preheat the stone or steel normally, on a shelf roughly 15–18 cm below the grill element rather than in the middle of the oven.
- On many electric ovens the grill will only engage below a certain set temperature — around 230 °C rather than the maximum — so check whether yours cuts the grill out at full heat.
- Bake conventionally first until the base has set, then switch to the grill for the final 60–120 seconds.
- Stay at the oven door for the entire grill phase. The window between well-browned and burnt is genuinely under 30 seconds.
Technique adjustments
- Some cooks run the sequence in reverse — grill first to blister the top, then switch to bake — which suits a very thin pizza whose base needs less time.
- Move the pizza to the centre of the element's footprint; grill elements heat the middle far more evenly than the edges.
Strengths
- Free — it is already fitted to nearly every domestic oven
- Directly fixes the pale-toppings problem a steel creates, without any change to dough or recipe
- Produces genuine blistering on cheese that a 250 °C bake alone will not
- Instant on and off, so it needs no preheat of its own
Limitations
- Very unforgiving: an unwatched grill finish burns a pizza in well under a minute
- Heats unevenly across its footprint, so one side of a large pizza browns faster
- Some ovens disable the grill above a certain set temperature, which conflicts with a maximum-heat preheat
- Does nothing for a base that is itself underbaked
Common failure modes
- Walking away during the grill phase and returning to a blackened rim
- Grilling a pizza whose base is not yet set, so the top burns over raw dough
- Placing the surface too far from the element, so the grill contributes nothing useful
- Fresh basil added before the grill phase, which blackens almost immediately

No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

- Chicago deep-dish pizzaPossible, but compromised
A deep-dish bake is 30–45 minutes long and the fillings need that time; the grill only reaches the top surface.
Compromise: It can brown the exposed cheese edge at the very end, but it cannot speed the bake and will scorch the rim if used for more than a moment.
Flavour and texture
Tends to add the toasted, faintly caramelised note of well-browned cheese and rim that a lower, slower bake often misses entirely. Pushed too far it crosses into acrid rather than charred.
Usually firms and blisters the top surface without further drying the base, which is exactly the imbalance correction most domestic-oven pizza needs.
Flavour and aroma
Grill finishing on a rim that is already dry can increase bitterness
Pushing browning past the Maillard stage into scorching produces genuinely bitter compounds, which is the boundary between char and burnt.
Exception: A slightly under-browned pizza finished briefly usually gains flavour rather than bitterness.

A 60–120 second grill finish usually increase browning
Direct radiant heat drives surface browning on cheese and rim far faster than convected air at the same nominal temperature.

Localised scorching creates alternating browned and pale patches, giving the bite more variation than a uniformly melted top.

Safety
- Never use parchment paper under the grill; it scorches and can ignite well below the element's surface temperature.
- Keep the oven door as the manufacturer specifies — some ovens require the door ajar when grilling, others closed.
Care and maintenance
- Fat spattered onto a grill element burns off on next use and smokes heavily; wipe the oven roof occasionally.
