Cooking on a pizza stone
A slab of cordierite or ceramic that stores oven heat and gives it back to the base. More forgiving than a steel and easier to overheat than people expect, its real enemy is thermal shock rather than temperature.

No heat of its own — it stores whatever the oven, BBQ, or pizza oven around it provides and transfers it into the dough on contact.
Moderate conductivity with meaningful thermal mass. It takes a long time to charge and then releases heat into the dough steadily rather than instantly, which is what makes it forgiving: a slightly-too-hot stone rarely burns a base in the way a slightly-too-hot steel will.
A stone contributes no smoke, but a porous stone absorbs spilled oil and burnt flour, which will smoke on later bakes and can taste acrid.
Bottom and top heat
Bottom heat
Good and even. A fully charged stone sets and browns a base reliably, but it gives up its heat more slowly than steel, so a second pizza launched immediately after the first will bake noticeably slower.
Top heat
None of its own, though a stone positioned high in an oven reflects a little heat back down onto the toppings.
Setting it up
- Put the stone into the oven cold and heat it with the oven. Stone dislikes rapid temperature change far more than it dislikes high temperature.
- Position it on the upper-middle shelf, not the floor of the oven, so top and bottom heat stay in balance.
- Allow 45–60 minutes at full temperature after the oven signals it is ready — the surface reaches temperature long before the core does.
- Launch onto a bare, dry stone. Semolina or coarse flour on the peel helps release; excess flour on the stone itself will scorch.
- Leave the stone in the oven to cool after use, ideally with the door ajar, rather than moving a hot slab onto a cold worktop.
Technique adjustments
- Allow a longer bake than you would on a steel of the same thickness at the same temperature — roughly 8–12 minutes rather than 4–6 in a domestic oven.
- Wait several minutes between pizzas so the stone can recover, or accept that each successive base will be paler.
- Never launch frozen or fridge-cold dough straight onto a very hot stone.
Strengths
- Forgiving — the slower heat transfer makes burning the base much harder than on a steel

The most broadly adaptable surface in this catalogue — the same stone moves from a domestic oven to a gas BBQ to a kamado. If you own one surface, this is the versatile choice; if you only ever bake indoors, a steel transfers heat harder.

Usually gives an evenly firm, dry base with reliable browning. Compared with a steel it tends to produce a slightly softer, less sharply crisp underside, which suits some styles better than others.

Carbonised flour and oxidised oil on the surface can transfer scorched, acrid notes to the base.

Safety
- A stone at full oven temperature holds dangerous heat for well over an hour; leave it in place to cool.
- A cracked stone can fail completely under load — retire it rather than continuing to bake on the pieces.
Care and maintenance
- Never use soap or detergent. The stone is porous and will hold the taste permanently.
- Scrape residue off with a bench scraper or stiff brush once cool; a damp cloth on a cool stone is enough for grease.
- Staining and darkening are normal and do not affect performance. A stone is supposed to look used.
- Store indoors and dry — absorbed moisture turns to steam on the next heat-up and can split the stone.

Sources disagree on whether a stone should be heated from cold with the oven or preheated separately over direct heat (as some grill guides advise).
