How to get cheese to behave better
Oily, burnt, or stubbornly pale cheese are three symptoms of the same mismatch — a cheese chosen for one bake length being used for another.
What you are aiming for
Cheese that melts evenly, browns where you want it to, stretches rather than tearing, and does not leave a pool of oil.
Why it happens
Cheese behaviour under heat is a function of moisture, fat, and protein structure. Heated past its point, the protein network contracts and squeezes out fat and water — which is what an oil pool is. Browning needs residual lactose and enough heat and time. Different cheeses are built for different bake windows, and using a 90-second cheese in a 10-minute bake or vice versa causes most of the problems people blame on the oven.

Levers are grouped by where in the process they sit, and within each group the strongest come first. Anything marked commonly overrated is advice you will see elsewhere that does less than it is credited with — and says why.

Primary leverOiling out is a direct consequence of heating past the point where the protein network contracts. A pizza pulled when the cheese is just browning will not have an oil pool; one held two minutes longer will.

Matching cheese to bake length
Primary leverFresh mozzarella is built for a 60–90 second bake and floods and oils over 10 minutes. Low-moisture mozzarella is built for the long bake and stays rubbery and pale in a very fast one. This single mismatch explains most cheese complaints.
Grating your own rather than using pre-shredded
SignificantPre-shredded cheese carries anti-caking starch or cellulose that interferes with melting and produces a grainy, separated result.
Draining and drying fresh mozzarella
SignificantTearing it and letting it drain on kitchen paper for 20–30 minutes removes free water that would otherwise pool on the pizza.
Blending cheeses for different jobs
SignificantMelt, stretch, browning, and salt are different properties, and no single cheese is best at all four. A low-moisture mozzarella base with a small proportion of a browning or salt cheese is standard practice for exactly this reason.
Buying more expensive mozzarella
Commonly overratedPrice correlates with eating quality raw, not with melt behaviour on a pizza.
Why it is overstated: Expensive buffalo mozzarella is worse on a 10-minute domestic-oven bake than a plain low-moisture block, because it carries far more water. The relevant property is moisture content and intended bake window, not quality tier — this is one of the clearest cases in pizza where paying more gets a worse result.

Cheese under the sauce, or under other toppings
SupportingShielding cheese from direct top heat is a real technique — Chicago deep-dish and several tavern styles do it deliberately to stop it burning during a long bake.
Fix it on this pizza
Pull the pizza as soon as the cheese is browning rather than waiting for more colour.
Avoids the point at which the protein network contracts and releases oil.
Blot the oil off with kitchen paper if it has already pooled.
Cosmetic but effective — the oil is on top and comes off cleanly.
Tear and drain fresh mozzarella before it goes on.
Removes free water that would flood the base during the bake.
Change it for good
Keep low-moisture mozzarella for domestic-oven bakes and fresh mozzarella for high-heat ones.
Removes the mismatch that causes most cheese problems in one decision.
Buy blocks and grate them yourself.
Melting behaviour improves noticeably compared with pre-shredded.
Experiment with a small proportion of a browning or salt cheese alongside the mozzarella.
Adds colour and savoury depth that mozzarella alone does not provide, without changing the melt.
What it costs you
Low-moisture mozzarella behaves better and tastes plainer than fresh; the properties that make it reliable in a long bake are the same ones that make it less interesting to eat. Blending in a stronger cheese adds flavour and can make the pizza saltier and greasier. Draining fresh mozzarella improves the bake and costs some of the delicacy that made it worth using.
How far you can realistically get
You cannot have fresh mozzarella's texture and low-moisture mozzarella's bake stability at once, and the choice is dictated by bake length rather than preference. In a domestic oven, fresh mozzarella will always release more water than the bake can handle.
