Wood-fired vs domestic oven: what actually tastes different
What does a wood-fired oven actually contribute to how a pizza tastes?
Short answer
Most of what distinguishes wood-fired pizza is the temperature, not the wood. A 60–90 second bake at 430–485 °C produces charred spotting and a soft, moist crumb that a 250 °C oven cannot; the smoke contribution over that time is small, and a gas pizza oven at the same temperature tastes remarkably similar.
What is actually happening
Two things happen at 450 °C that do not happen at 250 °C. First, the dough surface passes through browning into localised carbonisation within seconds, producing discrete dark spots with a distinctly toasted, faintly bitter flavour. Second, the interior never gets time to dry, so the crumb stays soft and moist — a texture that reads as a flavour difference even though it is not one. Smoke is a third, much smaller factor: a well-run wood oven burns cleanly with the fire established, and 90 seconds is very little exposure. This is directly testable — gas-fired pizza ovens produce nearly the same result with no wood at all.

More time drives more water out of the base, which is why home-oven pizza is typically crisper than wood-fired — a difference, not a deficiency.

What it does not change
A wood-fired oven does not improve a badly fermented dough, a watery sauce, or an overloaded pizza — it makes all three worse, because the short bake gives no time to correct anything. It also does not make pizza taste of woodsmoke in the way a smoker makes brisket taste of woodsmoke; anyone expecting that comparison to hold will be surprised.
Where this becomes a matter of taste
Char is genuinely bitter, and a substantial number of people find well-spotted Neapolitan crust unpleasantly burnt-tasting. The soft, wet centre of a true Neapolitan is likewise divisive — it is a defining characteristic to some and an undercooked pizza to others. Neither reaction is wrong.
In practice
- If you want the wood-fired result, chase the temperature rather than the fuel — a gas pizza oven gets you most of the way.
- Do not expect a domestic oven to produce char; it can produce excellent even browning, which is a different thing.
- Wood does contribute something, but far less than the name implies, and adding wood chips to a short bake is not a shortcut.
- The crisper base of a domestic oven is a genuine advantage for styles that want one.

How much of the 'wood-fired' flavour is smoke is genuinely contested. Popular and marketing writing attributes it largely to the wood; the short bake time and clean-burning fire make substantial smoke uptake implausible, and gas ovens at the same temperature produce a very similar result. PizzaHQ states both positions rather than resolving them.
