- ShapePress the dough thin and even directly into a well-oiled pan, right out to the edges. Don't let it rest and re-press repeatedly the way a wetter Detroit or Sicilian-American dough would — a brief press is enough.
- Final proofGive it only a brief rest (15-20 minutes) or skip proofing altogether if the dough is already relaxed in the pan — overproofing here produces a thicker result the style doesn't intend.
- TopApply a layer of low-moisture mozzarella directly on the dough, then finish with a garlicky tomato sauce spooned on top of the cheese in a few broad stripes — the reverse of most pizza layering, similar in spirit to Trenton's tomato pie.
