Why long fermentation tastes different
Why does a dough fermented for two or three days taste different from a same-day one?
Short answer
A long-fermented dough usually tastes more complex and faintly tangy, because fermentation has produced organic acids, alcohols and aromatic esters that a two-hour rise has no time to make. It is a real, mechanistic difference, and it is not the only thing that separates good crust from bad.
What is actually happening
During fermentation, yeast converts sugars to carbon dioxide and ethanol, and lactic-acid bacteria present in the dough produce lactic and acetic acid. Ethanol and those acids react to form esters, which carry fruity and floral aromatic notes. Enzymes in the flour simultaneously break starch into simpler sugars and protein into free amino acids, which are both flavour compounds in their own right and better substrates for browning. None of this has meaningfully happened after two hours; a great deal of it has after 48. Cold fermentation slows the gas production without stopping the enzymatic and bacterial activity, which is why the fridge is the usual tool — it lets flavour development run long without the dough over-proofing.

Each claim below is deliberately hedged. PizzaHQ's sensory vocabulary has no “always” — the strongest statement available is “usually”.

Texture and mouthfeel
Yeast consuming residual sugar over a long ferment can reduce browning
The same yeast activity that develops flavour also eats the sugars that would have browned the crust, which is why very long ferments sometimes bake paler.
Exception: Within a normal 24–72 hour window with an appropriate yeast quantity, enough sugar generally remains.

What it does not change
Long fermentation does not make a dough crisper, does not make it rise higher in the oven, and does not compensate for a weak bake. A 72-hour dough baked pale on a cold tray tastes better than a 2-hour dough baked the same way, and still tastes like an undercooked pizza. It also does not improve a dough that is under-salted — salt and fermentation are separate levers and neither substitutes for the other.
Where this becomes a matter of taste
How much tang is pleasant is genuinely personal. Some people find a 72-hour dough's acidity the best thing about it and others find it distractingly sour, particularly in styles whose sauce is already acidic. There is no correct fermentation length, only one that suits a given palate and style.
In practice
- 48 hours in the fridge is a common sweet spot: clearly more complex than same-day, well short of sour.
- Reduce the yeast when you extend the schedule, or the dough over-proofs before the flavour is where you want it.
- If a long-fermented dough bakes pale, the fermentation is the cause and a small sugar addition or a hotter bake is the fix.
- Judge a fermentation by taste and by dough behaviour, not by hours alone — temperature changes everything.
