Pizza on a gas BBQ

The most controllable BBQ for pizza. Turning off the burner directly beneath the pizza converts the grill into a genuine indirect-heat oven, which solves the burnt-base problem before it starts.

Multiple independently-controlled gas burners under the grates, which is precisely what makes zone control easy compared with charcoal.

Instantly adjustable and very repeatable. Switching individual burners off creates a genuine cool zone within seconds, where a charcoal fire has to be physically rearranged.

A clean gas BBQ adds almost no smoke character. What smoke there is comes from fat dripping onto hot burner covers, which is not a flavour most pizza benefits from.

Bottom and top heat

Bottom heat

Directly controllable. With the centre burner off and the outer burners on, bottom heat under the pizza drops to whatever the chamber provides, which is the whole point of the arrangement.

Top heat

Reasonable with the lid closed, as the outer burners drive hot air around the dome. Weak the moment the lid is lifted.

Setting it up

  1. Put the stone on the grates before lighting, so it heats with the grill rather than being placed onto a hot one.
  2. Light all burners, close the lid, and bring the grill up to around 260 °C.
  3. Turn off the burner directly beneath where the pizza will sit, leaving the outer burners running — this is the indirect setup.
  4. Give the stone at least 30 minutes with the lid closed; aim for a stone surface around 260–300 °C if you can measure it.
  5. Launch, close the lid immediately, and check after about 4 minutes. Total time is usually 7–10 minutes on a stone.
  6. Rotate once partway through, as the burner side always runs hotter.

Technique adjustments

  • An infrared thermometer is genuinely useful here — grill lid thermometers read air temperature at the dome, not the surface the pizza is sitting on.
  • If the base still colours too fast, raise the stone on a rack or add a second layer beneath it to break the direct path from the burners.
  • Preheat longer than feels necessary. Almost every disappointing gas-BBQ pizza is a preheating failure.

Strengths

  • The easiest BBQ to create a true indirect zone in, and it takes seconds rather than a rearrangement of fuel
  • Very repeatable session to session — the same burner settings give the same result
  • Fast to light and fast to recover, so a run of pizzas for a group is genuinely practical
  • Clean-burning, so no ash management and no soot on the food

Limitations

  • Contributes essentially no smoke or fire character, which is often the reason people wanted to cook outdoors
  • Usually tops out lower than a good charcoal fire or a kamado
  • Lid thermometers are misleading — they read dome air, not the stone
  • Poor thermal mass in the grill itself, so heat is lost quickly whenever the lid opens

Common failure modes

  • Burnt base from leaving all burners running directly under the pizza
  • Pale, slow pizza from lifting the lid to check every minute
  • A pale base from launching onto a stone that had 10 minutes rather than 30
  • Trusting the lid thermometer and launching onto a much cooler stone than the dial suggested

Adapting it at home

Very high. A three-burner gas BBQ with a stone is a capable, genuinely repeatable pizza setup, and the closest thing to an outdoor domestic oven most people already own.

Which styles suit it

No cooking environment suits every style. Where a style is workable but different, the adaptation or the compromise is stated rather than glossed over.

  • Roman tondaStrongly suited

    A thin crisp round is well served by a hot stone and a 7–10 minute indirect bake.

  • The temperature range and bake time map closely onto what this style wants, provided the round is kept modest in size.

  • A sparse topping load suits an environment where bottom heat leads.

  • Neapolitan pizzaPossible, but compromised

    Most gas BBQs top out around 300 °C, still well short of the 430 °C-plus a Neapolitan bake needs.

    Compromise: You get a better result than a domestic oven but not a Neapolitan one — the bake is minutes rather than seconds and the rim browns rather than spots.

  • Chicago deep-dish pizzaGenerally unsuitable

    A long, gentle, even bake is not what this equipment is good at.

    Compromise: Holding a gas BBQ at a low, stable temperature for 40 minutes is possible but pointless — a kitchen oven does it better and unattended.

Flavour and texture

Usually much closer to a hot domestic oven than to a wood fire. The gain is in temperature and the resulting char, not in smoke — anyone hoping a gas BBQ will taste of fire will be disappointed.

Tends to give a crisper, more charred base than a domestic oven at the same nominal setting, because the stone runs genuinely hotter.

Flavour and aroma

  • Clean gas combustion in a closed chamber usually reduce smoke character

    Gas burns cleanly and contributes very little in the way of smoke compounds, so a gas-BBQ pizza tastes much more like an oven pizza than people expect.

    Exception: Fat dripping onto hot burner covers produces genuine smoke, though usually an acrid rather than a pleasant one.

  • A stone at 260–300 °C rather than a domestic oven's 250 °C often increase char character

    The higher surface temperature is enough to start producing localised charring on the base that a domestic oven does not reach.

Texture and mouthfeel

  • A shorter, hotter bake tends to reduce perceived moisture

    Less total time in the chamber gives toppings less opportunity to release water into the base.

What goes wrong on this equipment

  • The lid thermometer reads dome air temperature, not the stone. On a gas BBQ the air comes up to temperature within minutes while the stone takes at least 30, so the gauge routinely says ready when the surface is not.

    Change next time: Give the stone a full 30 minutes with the lid closed before the first launch, and measure the stone surface with an infrared thermometer rather than reading the lid gauge.

Safety

  • Check hose and regulator connections before each session.
  • Never operate in an enclosed space, including a partly-open garage.
  • Turn the gas off at the bottle, not just the control knobs, when finished.

Care and maintenance

  • Brush the grates and clear burner covers of built-up fat, which is the main source of unwanted smoke and flare-ups.
  • Take the stone out and store it indoors between sessions.

Generally accepted

Reported temperature targets differ: one source calls for a stone surface of at least ~299 °C, others recommend holding the grill at 232–246 °C with a well-preheated stone. Both are workable and describe different setups — a hotter stone with a shorter bake, versus a cooler chamber with a longer one. The range above spans both rather than averaging them into a figure nobody stated.
