Gas is the better choice for repeatable, low-drama pizza and for cooking several in a row for a group — it behaves much more like an outdoor oven, at the cost of contributing almost no fire character. Charcoal is the better choice if the char and the live fire are the reason you are cooking outdoors at all, and if you are willing to learn the fire; it is hotter, more characterful, and considerably less forgiving.
