Pizza troubleshooter
Choose what you saw — up to three things — and, if you know them, what you baked on, the style and the bake. PizzaHQ ranks the likely causes from its 57 documented symptoms, 137 recorded causes and 36 equipment-specific branches, and for each one says why it fits, how to tell it apart from its neighbours, what you can still rescue, and what to change next time.
Ranked causes
Most likely
The pizza is too big for the basket and curls up the sides towards the element
Generally acceptedEquipment · from Pizza cooks unevenly in the air fryer
A basket air fryer has its element directly above the food and very little headroom. Any part of the pizza pushed up the basket wall is centimetres closer to the element than the rest and scorches long before the flat middle is done.
- Why it fits
- Recorded cause of "Pizza cooks unevenly in the air fryer", ranked 1 of 5 by PizzaHQ's editors.
- How to tell it apart
- The scorched parts are exactly where the pizza rode up the basket wall or was folded to fit.
- Rescue it now
- Lower the temperature, turn the pizza round, and give the pale or cool part more time; if the base is the problem, finish it for a minute or two in a dry, hot frying pan. Check the middle is hot throughout before eating a packaged pizza
- Next time
- Choose a pizza or slice that lies flat in the basket with room around it, cook one at a time, use a liner only if the appliance maker allows it and never one that covers all the perforations, turn halfway, and for packaged pizza use the air fryer only if the pack gives air-fryer instructions
Tall toppings and the rim sit close to the element
Generally acceptedBake environment · from Pizza cooks unevenly in the air fryer
Heat from an element a short distance above falls hardest on whatever is highest; pepperoni edges, a puffy rim and mounded cheese brown first while lower areas lag.
- Why it fits
- Recorded cause of "Pizza cooks unevenly in the air fryer", ranked 2 of 5 by PizzaHQ's editors.
- How to tell it apart
- The burning is on the highest points — rim, cupped pepperoni, piled cheese — while lower parts of the top are only just done.
Also possible
Air is blocked from reaching the underside
Generally acceptedWorkflow and timing · from Pizza cooks unevenly in the air fryer
Air fryers rely on hot air moving under and around the food. A liner over the perforations, overlapping slices or a crowded basket leaves the base sitting in its own steam.
- Why it fits
- Recorded cause of "Pizza cooks unevenly in the air fryer", ranked 3 of 5 by PizzaHQ's editors.
- How to tell it apart
- The top is well coloured but the base is pale and soft, with a liner, paper or foil under the pizza or slices overlapping.
Temperature too high for the thickness of the pizza
Generally acceptedBake environment · from Pizza cooks unevenly in the air fryer
In a small, fast chamber, a thick or frozen pizza browns outside well before heat reaches its middle; a lower temperature for longer narrows the gap.
- Why it fits
- Recorded cause of "Pizza cooks unevenly in the air fryer", ranked 5 of 5 by PizzaHQ's editors.
- How to tell it apart
- The outside is evenly dark all round, not just in spots, while the centre of a thick or frozen pizza is still cool.
One part of the basket runs hotter, and the pizza was not turned
Supported, with regional variationEquipment · from Pizza cooks unevenly in the air fryer
Fan and element layouts differ between models, and many brown one side or the edge of the basket more strongly; a pizza left in one position shows that pattern.
- Why it fits
- Recorded cause of "Pizza cooks unevenly in the air fryer", ranked 4 of 5 by PizzaHQ's editors.
- How to tell it apart
- The same side or edge is darker every time, in the same position in the basket, regardless of the pizza.
The pizza is larger than the basket. Anything pushed up the sides sits much closer to the element than the flat middle, so it scorches before the rest has cooked.
Generally acceptedEquipment · Pizza in an air fryer · from Pizza cooks unevenly in the air fryer
- Why it fits
- Applies only if you are using "Pizza in an air fryer".
- How to tell it apart
- The scorched areas are where the pizza curled up the basket wall or was folded to fit, while the flat middle is underdone.
- Rescue it now
- Turn the temperature down and, if possible, trim or cut the pizza so the pieces lie flat; give the flat middle more time.
- Next time
- Use a pizza or slices that fit flat with a gap all round, and cook in batches rather than squeezing one in. For packaged pizza, use the air fryer only if the pack gives instructions for one — some list it only for small personal pizzas.
How this works
Every cause shown is one PizzaHQ has already documented, either on a symptom page or as an equipment-specific branch. The troubleshooter does not invent causes; it ranks the documented ones against what you told it.
A cause starts from its recorded evidence confidence and its editorial rank within its symptom. An equipment-specific cause for the equipment you used rises sharply, and causes for equipment you are not using are set aside. A kind of cause (bake environment, fermentation, toppings…) that also explains another thing you saw rises again — one explanation for two observations is more likely than two separate faults.
If you name a style, its recorded equipment fit, bake temperature and bake time are compared with yours; a bake far outside the style's range, or equipment PizzaHQ records as a compromise for that style, raises the heat and equipment causes and says why.
Assumptions
- Causes are bucketed — most likely, also possible, less likely — rather than given a percentage; the underlying ranking is additive and every addition is listed under 'Why it fits'.
- 'How to tell it apart' is the observation PizzaHQ records as distinguishing that cause from the symptom's others.
- Bake temperature and time only count when a style is chosen, because they are judged against that style's recorded range.
Limitations
- Only documented symptoms can be diagnosed. If what you see is not listed, the closest symptom page is the better starting point.
- Equipment-specific branches exist where equipment genuinely changes the answer; most dough-stage problems have none, by design.
- A ranking is a starting point for checking, not a verdict — the distinguishing observations are there so you can confirm or rule out each cause yourself.
