Preparation

Canned or pre-cooked kernels, drained well before topping to limit added moisture. A spiced 'masala corn' variant — kernels tossed with chilli, chaat masala, and other warm spices before topping — is a common Indian-style pizza preparation

Scattered evenly in a moderate, even layer rather than mounded

Applied before baking.

Cautions

  • insufficiently drained kernels add excess surface moisture, contributing to a soggy top layer

History and cultural context

No Italian antecedent. Sweetcorn arrived on pizza through the localisation of chain and domestic menus in several unconnected markets, which is why it is simultaneously completely normal and widely mocked depending on where the reader lives.

A standard chain topping in Japan, South Korea, the United Kingdom, Germany, Brazil and India, among others.

One of the clearest examples of parallel adaptation: the same topping was adopted independently in markets with no connection to each other, in each case because it was cheap, sweet, familiar and already in the tinned-goods aisle.
