History and cultural context
A soft, spreadable, heavily chilli-spiced cured pork product from Spilinga and the wider Vibo Valentia area of Calabria, historically made from the cheaper cuts and preserved with chilli.
Traditional regions: Calabria
Adopted rapidly by artisan pizzerias internationally from roughly the 2010s, to the point that it is now more visible on menus in London or New York than its Calabrian production scale would suggest.
One of the few genuinely Italian regional ingredients to enter the international pizza vocabulary recently, rather than travelling with historical migration.
Calabrian emigration carried the product to diaspora communities long before the recent restaurant fashion; the international pizza adoption is a separate and much later commercial phenomenon.
