Internal Italian migration carries Neapolitan pizza north
Pizza was not a national Italian dish until southern Italians carried it north during the post-war internal migration to Milan, Turin and the industrial north — an internal movement that made pizza Italian rather than Neapolitan, and one routinely omitted from accounts that jump straight from Naples to New York.

Meal-occasion change
Pizza became an evening sit-down restaurant meal ordered as a whole personal pizza with a beer, rather than the cheap street food it had been in Naples — the form in which most of Italy now encounters it.

Oven or equipment adaptation
Electric and gas deck ovens replaced wood in most northern pizzerias, which suits the thinner, longer, lower-temperature bake and does not suit the Neapolitan one.

Authenticity tension
The AVPN's codification in 1984 is best read partly as a response to this internal divergence: the standard defines Neapolitan pizza against the northern Italian pizzeria norm, not only against foreign adaptations.
