Pizza-making as a recognised specialist craft
Pizzaiolo is a trained occupation with its own apprenticeship, vocabulary, competitions and — since 2017 — UNESCO recognition. That framing sits awkwardly alongside pizza's simultaneous role as cheap, casual, mass-produced food, and both are genuinely true of the same dish.
