Two distinct uses. As a noun, the feminine form of pizzaiolo — a woman who makes pizza professionally. As an adjective, 'alla pizzaiola' describes a Neapolitan sauce of tomato, garlic and oregano, and any dish dressed with it — most familiarly carne alla pizzaiola. The sauce sense is older and more common in Italian kitchens than in English-language pizza writing.
