Sauce tastes raw

Affects quality

A sauce-type-to-oven-temperature mismatch — uncooked sauce needs a genuinely hot, fast bake.

Ask yourself

  • Was an uncooked sauce used on a long, cooler bake?
  • Was the bake hot and fast enough to fully cook the sauce in place?

Likely causes

  1. #1

Uncooked sauce used on a bake too cool or too slow to cook it through

    Strongly supported

Uncooked sauce styles rely specifically on a very high, short bake to cook fully; used on a cooler, longer bake, it simply never finishes cooking.

Rescue it now

Not fixable once baked

Prevent it next time

Use a pre-cooked sauce for any style baked below roughly 350C, reserving uncooked sauce for genuinely high-heat bakes
