AVPN certification exports Neapolitan practice without exporting Neapolitans
Since the 1990s the fastest-growing route for Neapolitan pizza has been formal training and certification rather than migration: AVPN-affiliated pizzerias now operate on every inhabited continent, staffed overwhelmingly by locally-born pizzaioli trained to the disciplinare.

Well-documented single route
Sources broadly agree on one route of transmission, and it is documented rather than inferred.
What changed on arrival
Preservation without change
The explicit purpose of the route is non-adaptation: the disciplinare specifies flour, hydration range, ball weight, proof, oven type and bake time, and certification is conditional on following it.

Ingredient substitution
Even so, ingredient sourcing outside Italy remains the practical limit — San Marzano DOP tomatoes and mozzarella di bufala campana DOP are importable but perishable, so many certified pizzerias abroad use approved equivalents rather than identical inputs.

Linguistic change
Italian technical vocabulary — impasto, staglio, cornicione, canotto, forno a legna — travels intact with the training, which is why these terms are now used untranslated by pizzaioli who speak no Italian.

Authenticity tension
This route complicates the usual authenticity framing in a useful way: it produces pizza closer to the Neapolitan standard than most pizza made in Naples, by people with no Neapolitan ancestry at all. Whatever authenticity means here, it plainly is not descent.
