Pala

Italian · pronounced PAH-lah

Two related senses. Literally, the peel used to launch and retrieve a pizza. As a style name, 'pizza in pala' is a long oval pizza baked directly on the oven floor on a peel, highly hydrated and airy, sold by the slice — closely related to Roman al taglio but baked on the hearth rather than in a tray.

Literal meaning

Shovel, or peel

Region

Rome and central Italy

Also known as

pizza in pala, peel

Common misuse

Using 'pala' and 'teglia' interchangeably. They name opposite things: pala is baked on a peel on the hearth, teglia is baked in a metal tray.
