Compare any two

Choose two pizza styles, pieces of equipment, cheeses, sauces, flours or techniques. PizzaHQ lines them up on the dimensions it records for both, says which way each one leans, and lists separately what it cannot honestly compare. Where an editor has written a comparison of the pair — there are 40 — it is linked first.

Choose two to compare.

How this works

Only like is compared with like: an ordinal rating against the same rating, a range against the same range. Low/moderate/high cheese moisture is compared with cheese moisture, never with a sauce's water content.

A row is moved to 'cannot honestly be compared' when one side has no recorded value, or when the comparison would set a part against a whole — a baking surface has no temperature of its own, for example.

For two styles, the derived rows (crispness, airiness, char…) use the same evidence-backed positions as the 'what to try next' tool, and show the evidence rather than a score.

Assumptions

  • Ratings such as low, moderate and high are relative within PizzaHQ's own catalogues, not laboratory values.
  • Two ranges that overlap are shown as the same; only clearly separated ranges count as a difference.

Limitations

  • Techniques are compared only within the same stage; two techniques from different stages do different jobs.
  • Comparisons across families (a cheese with a flour) are not offered — there is nothing commensurable to compare.
  • Compared pairs are not separate pages and are not indexed; the written comparisons remain PizzaHQ's considered judgements.
